Chinese Stir-Fry Noodles

These noodles are made under 15 min yet taste sooo good!Also this recipe is vegetarian and vegan friendly!


Ingredients:

  • 2 cups vegetable broth

  • 200 g of noodles of choice(I used pancit canton)

  • 1 tsp of pepper

  • 1/2 tsp salt

  • 6 tbsp soy sauce

  • 2 tbsp chopped ginger

  • 3 cloves sliced garlic

  • sliced green onion

  • 1 small white onion diced

  • 2 tbsp olive oil

  • 1 thinly sliced carrot

  • 1 cup of sliced cabbage (you can use any veggies of choice ex:bell peppers , broccoli,etc.)

Directions:

  1. In a large pan on high heat , place the olive oil,garlic,white onion,green onion,and ginger and stir fry for 2 min until aromatic.

  2. Add in the vegetables and stir fry for 7 min until cooked.

  3. In a pot boil 2 cups of vegetable broth and cook the noodles for 4 min until semi-cooked.

  4. Strain the noodles and save the vegetable stock for later.

  5. Place the noodles back into the pan and stir in the salt pepper and soy sauce.

  6. Add 1/2 cup of remaining vegetable broth to the pan and stir fry for 2 more min.

  7. Bon Appétit!
