This recipe makes the fluffiest pastries that look phenomenal !
Ingredients:
3 cups flour ( and extra for rolling the dough)
2 eggs
2 tbsp powdered sugar
1/2 tsp salt
1 tbsp yeast
1 cup milk
1/2 cup of softened butter
Fillings:
1/3 cup zaatár +6 tbsp of olive oil
Shredded cheese (I used a mix of mozzarella and Akawi cheese)
one egg yolk and a tbsp of milk
black sesame seeds (or any seed of choice)
Directions:
Place the flour, 2 eggs, powdered sugar, salt, and yeast in a large bowl or a stand mixer and mix.
While mixing gradually add the milk until the dough forms.
Once the dough forms add the butter 2 tbsp at a time until its fully incorporated.
Knead the dough for 2-5 minutes .
Cover and allow to rest for 1 hour.
Prepare the fillings accordingly : (mix the zaatár with the oil-Shred your cheeses)
Whisk the one egg yolk with a tbsp of milk to create an "egg wash" .
After the dough rested , cut it in half (covering one of the pieces for it not to dry)
Using the rolling pin , roll out the dough into a circle about 1.5 cm thick.
Cut the dough into 8 equal triangles.
Place the filling on the top of each triangle and roll going toward the tip.
After rolling, take both edges and bind them together creating a crescent.
After repeating with the remaining dough , place the crescents onto a baking sheet either greased with some oil or lined with some parchment paper.
Brush the crescents with the egg wash and sprinkle some black sesame seeds or any seed of choice to create a difference between each crescent filling.
Then bake the crescents for 20 minutes at 180 degrees celsius .
