Quick and Easy Chocolate Chip Cookies

These are probably my favorite cookies to make! They turn out soft and chewy every time.

makes about 20 cookies (60g each)

Ingredients:

  • 200g butter (melted)

  • 1 cup brown sugar

  • 1/2 cup white sugar

  • 1 tsp vanilla

  • 2 eggs

  • 1 tsp baking soda

  • 3 cups flour

  • 1/2 tsp salt

  • 1 cup of chocolate chips (use more or according to preference)

Directions:

  1. Preheat oven to 160°C.

  2. Place your butter in a microwave safe bowl, and melt at 30 second intervals until fully melted.(or melt in a pan over medium heat)

  3. In a stand mixer, cream together the melted butter, brown sugar and white sugar until light and fluffy.

  4. Add the eggs and vanilla and mix until just combined.

  5. In another bowl, mix the flour, baking soda and salt, then add them to the butter-sugar mix until a dough forms (make sure not to over-mix the dough)

  6. Stir in the chocolate chips

  7. Grab a few tablespoons of the cookie dough and shape the cookie dough into a ball.(I use about 60g of cookie dough for each cookie)

  8. Place your cookies on a baking sheet lined with parchment paper, placing them about 6 cm apart to make sure they don’t stick to each other.

  9. Bake the cookies for 10-12 minutes on the middle rack.(the cookies will look pale from the outside and will still be soft on the inside)

  10. Allow the cookies to cool for at least 10 minutes on the baking sheet before removing them.
